It’s getting to the point where it’s too cold for green smoothies. My old and drafty house makes staying warm a bit of a challenge. Despite my complaints though, most mornings will still start with a cup full of spinach, kale, cucumber and fruit. I’d really rather drink my salad than eat it. #sadbuttrue. For those mornings when the thought of starting my day with something chilly keeps me under the covers way past the
third fifth snooze cycle, I have this warm and filling recipe to lure me out of my comforter cocoon.
Apple Pecan Breakfast Quinoa (serves 1-2) (slightly adapted from The Way of the Happy Woman)1/2 cup quinoa, rinsed & drained 1 cup unsweetened almond milk small handful raisins couple sprinkles of cinnamon pinch of salt 1 apple 2 tablespoons ground flax seed/flax seed meal 6-10 pieces of chopped pecans maple syrup (optional)
In a small saucepan, combine the quinoa, almond milk, raisins, cinnamon & salt. Bring to a boil, then reduce the heat and simmer for about 15 minutes or until all of the liquid is absorbed.
Meanwhile, in a small bowl, shred the apple and then mix with the flax seed. Set aside.
When the quinoa is done, pour into the bowl with the apple and combine. (If sharing, divide between two bowls.) Top with the chopped pecans and drizzle with a touch of maple syrup if desired.0
