I apparently can’t read. OK, honestly its just that I’m usually moving so fast, paying complete attention gets thrown by the wayside. This was certainly the case with this pizza. My original intention was a Thai Chicken Pizza, but it turned out I didn’t have any Thai cooking sauces left. (Just a curry sauce and I’ve had my heart set on trying an authentic curry, especially as the temps in MD continue to head for the wintery.) I happen to be a pineapple pizza lover, so I was mighty intrigued when I was going to have to use WorldFood’s Indochina Cambodian Pineapple Lemon Grass Stir-fry sauce as my pizza base.
Before pizza sauce however, comes pizza dough.
I do enjoy making my own pizza dough, though it’s an ongoing experiment. This is the basic recipe I use most often though. I usually sub one of the cups of regular flour for whole wheat & I’ve started just making one bigger pizza (though it does take a bit more finagling to spread all the dough out evenly.) You could also just purchase some dough from the refrigerated section of your grocery store or a pre-made one. It’s pizza, it’s supposed to be fun and delicious, not hard.
It’s best to have all of your ingredients prepped before you make the dough but if not, just make sure to put it back into a bowl and cover while you do. Luckily the most difficult step in prepping for this pizza is cooking the chicken.
Cambodian Pineapple Chicken PizzaIngredients approx. 2 cups cubed or shredded chicken , cooked 1/2 jar WorldFoods Cambodian Pineapple Lemon Grass Stir-fry Sauce 1/2 red onion chopped approx. 2 cups shredded mozzarella cheese 1 red bell pepper chopped fresh cilantro chopped chopped green scallions pizza dough (if using pre-made dough, follow those instructions for baking)
1. Preheat your oven to 500 degrees Fahrenheit at least 30 minutes before you plan to cook the pizza.
2. Once all the ingredients are prepped, sprinkle a little cornmeal onto your baking sheet and place your pizza dough in the middle. Using the heel of your hand and starting in the center work the dough outwards. If the dough is shrinking back just let it rest for 5 minutes and continue working.
3. Once the pizza dough is ready spread a decent layer of sauce onto the dough.
4. Sprinkle with red onions and chicken
5. And the fun part, douse that sucker with cheese and place in the oven. After about 5 minutes rotate the pizza and bake for another 3 to 5 minutes until the crust is golden brown and the cheese is beginning to get toasty.
6. Remove the pizza from the oven and allow to cool for five minutes. While its cooling, go ahead and sprinkle on your other toppings (bell pepper, cilantro, scallions)
7. Once the pizza is a bit cooled off, slice and enjoy!
I can really imagine using any of the WorldFood sauces I’ve tried so far as a pizza sauce.
