These were inspired by a stop at Smash Burger on our way to the Denver Airport to make our journey back to the East Coast. I have no idea why they’re called Colorado Burgers, but I could seriously eat one of these cheesy, spicy things everyday. I had to make sure I could recreate them and fed my attempt to friends with much approval. Next time I will remember to make some sweet potato fries to serve on the side.
Colorado Burgers (inspired by Smash Burger) makes 8 quarter-pound burgers
Ingredients2 lbs ground beef 2-3 tablespoons Worcestershire sauce A generous sprinkle of seasoned salt A generous sprinkle of freshly ground black pepper 2 jalapeno peppers, de-seeded and sliced lengthwise 2 poblano peppers, de-seeded and sliced lengthwise olive oil 8 slices pepper jack cheese 8 slices sharp cheddar cheese 1 avocado, peeled, pitted and thinly sliced mayonaise Sriracha 8 hamburger buns
Preheat your oven to 350 degrees Fahrenheit. Arrange your peppers in a single layer on a baking sheet and sprinkle and toss with a little olive oil. Once the oven is preheated throw in the peppers for about 20 mins, stirring around the 10 minute mark. You want them fairly crispy.
In a large bowl mix together your beef, Worcestershire, salt and pepper. Form the mixture into 8 burger patties. Cook the patties in a large frying pan or skillet over medium heat to desired done-ness, placing a slice of each cheese on top towards the end of cooking time to let it melt.
While everything is cooking slice up your avocado and mix together a little Sriracha and mayonnaise to spread on your buns.
When everything is ready, slather your buns with spicy mayo, stack up your burgers and dig in!
