I really like brussels sprouts. I really like the idea of eating brussels sprouts. I will try them anyway they are presented to me or any way I can think to get them into my mouth. (Yes, I’ve got some ideas :-))
These were more or less born out of a necessity to use up some brussels. I had originally intended on making a more traditional curry with the last of my WorldFoods cooking sauces. It is me we’re talking about though, not a whole lot of “traditional” comes out of my kitchen.
Curried Brussels Sprouts and Tilapia Tacos (inspired by this recipe from Farmgirl Gourmet)
Ingredients4 Tilapia fillets cooking spray salt and pepper to taste 1 tablespoon toasted sesame oil 1 tablespoon fresh ginger, chopped 3ish cups Brussels Sprouts, trimmed and quartered 1 red bell pepper cut into thin strips, then halved (just to make them shorter) 2 green onions, sliced 1 jar WorldFoods Rendang Curry Cooking Sauce Fresh cilantro, roughly chopped for garnish sliced scallions, for garnish taco shells of your choice (we went with whole wheat tortillas because that’s what we had on hand)
Turn on the broiler and spray a baking sheet with cooking spray. Place the Tilapia fillets on the baking sheet and season with salt and pepper. Once the oven is hot, broil the fish for about 3 minutes per side or until it flakes easily with a fork.
While the fish is cooking, heat a large skillet over medium-high heat and add the sesame oil. When the oil is hot, add the ginger and saute for just a minute. Add the brussels sprouts and green onions and saute for about 5 minutes or so, the brussels will pick up some color. At about the 3 minute mark add the red peppers.
Add the jar of Curry Sauce to the pan and gently stir to coat all the veggies. Once the sauce is hot, remove the pan from the heat.
Spoon some brussels sprouts onto your tortillas/taco shells and top with fish, cilantro and scallions.
Enjoy! It will be easy to do, these were pretty tasty and quite healthy.
