Sunday nights are the perfect excuse for a good and simple pasta dinner. After a full weekend, boiling pasta and chopping artichoke hearts and olives are about the only steps I can handle. Saturday was spent outdoors with friends and Sunday we took our engagement photos and got to meet an adorable baby. A bowl full of carbs (and the thought of leftovers) also served as a perfect comfort before a hectic week.
Simple Sunday Pasta (makes 4-6 servings)
Bring a large pot of water to a boil and add about a tablespoon of salt once rolling. Cook pasta according to package directions. In the meantime, dump the jar of sauce into a large saucepan and toss in the artichoke hearts and olives. Heat over medium heat until heated through. Once the pasta is done, drain and immediately pour into sauce. Toss well. Top each serving with a little sprinkle of breadcrumbs and Asiago cheese.
