Not that I need another excuse to melt cheese between two slices of well buttered bread, but today is National Grilled Cheese Day!
No matter what kind of sandwich you’re grilling today, you’re going to need some butter. Let it sit out for a bit to come to room temperature so it’s easier to spread.
My contribution to today’s festivities involves a little prep work, but it’s nothing a grill pan can’t take care of.
Grilled Peach, Steak & Cheese! (makes 5 sandwiches)
You’ll need:10 slices home-style bread Good slices of a buttery brie Blue Cheese Crumbles 20-25 Grilled Peach Slices (I recommend using frozen peaches, even when thawed they’ll probably stay together better than fresh, plus they’re always available.) Big, whole basil leaves Slices of grilled skirt steak (you’ll just need one)
First make sure you’ve got some mouths to feed as this recipe makes enough for 5.
Start by prepping your grilled ingredients. For the skirt steak, heat a grill pan over high heat. While it’s heating up liberally season the steak with salt. Once it’s scorching, remove from heat and brush with a little bit of cooking oil. Return to the stove top and toss on your steak. Cook for about three minutes on each side for medium-rare. Once cooked to an internal temperature of 135 degrees, remove from the pan and allow to rest for a few minutes before slicing (against the grain, thank you).
Next carefully wipe off the pan and lower the heat to medium. Brush on a little more cooking oil and start to grill the peach slices. They won’t take more than a minute or two per side.
Now that all of your components are ready. It’s time to start grilling!
Butter one side of all the slices of bread, liberally. Heat a skillet/pan over medium heat. Arrange a stack of brie, basil, steak, peach slices and blue cheese crumbles on five slices of the bread. In turns, place each stack on the skillet and top with another slice of bread (buttered side out). Toast/grill until the bread is crispy and golden, flip and repeat. Do the same until all five sandwiches are done.
Slide sandwiches onto plates, slice into triangles and enjoy!
