Yikes! 18 days since my last post? Not cool of me. I will do better. I have some fun ideas that I can’t wait to share with you but in the mean time, how about some weekday meal inspiration? I really enjoy sitting down with my laptop, cookbooks and any magazines I’ve earmarked every week to plan out our meals. Most of the time I only plan out Monday-Friday as we tend to just eat leftovers/go out on the weekends. At no point does a week ever go off exactly as I plan, but it’s always good to have a starting point. This is what I’m feeling this week.
Breakfasts – green smoothies (almond milk, rice protein, spinach, banana, cucumber and frozen tropical fruit)
Lunches – Shutterbean’s Curried Cauliflower Soup & leftovers (I like cooking meals for 4-6 since there are only two of us and packaging up the leftovers for our lunches the next day.)
Monday – Grilled skirt steak with roasted potatoes and brussels sprouts and homemade green chimichurri sauce
Tuesday – Spaghetti bolognese for 6 (pasta for the boys, spaghetti squash for me)
Wednesday – Tone it Up Herb Coated Salmon with mixed greens & brown rice/quinoa
Thursday – Artichoke gratin from (Plenty) with roasted Caesar brussels sprouts
Friday – homemade pizza night
Do you usually plan out your meals in advance, or just wait for nightly inspiration to strike?
