My body needs a vacation from vacation. Colorado was amazing, but now I’m stuck waiting for a couple hard-won bruises to heal (10+ years later and I can actually snowboard :-D) and I managed to snag myself a cold towards the end of the trip. So now the fridge is chock full of veggies to be roasted for dinners, the ingredients for black bean burgers, a Dr. Weil approved squash and apple soup. and green smoothie and fresh juice supplies. One of my favorite recent juice concoctions also happens to come out a very pretty shade of pink.
I shared this recipe over on Instagram a while back, but I was just so pleased with the results I needed to make it again, take a proper photograph and document it over here. This experiment was actually inspired by the lovely ladies of Tone It Up. (If you click on that link, be prepared to want to do a fun workout and eat, delicious wholesome foods.) They recently posted about enjoying a similar juice and they said this little combination can help rev up your metabolism, help fight off colds, give you glowing skin and is just a great little boost. I can definitely vouch for the afternoon boost and I’m counting on this little baby to help me fend off this cold.
Apple, Strawberry and Coconut Juice/Smoothie1 cup water 1 granny smith apple, cored, skin on 12+ whole frozen strawberries 3 tablespoons coconut flakes 1/2 tablespoon coconut oil Pour into a glass (and stick a cute straw in it)
