What would you do with some mild Italian sausage and thyme leftover from some recent dinners and a humble sweet potato sitting lonely on your counter?
Make a pizza? Obviously!
Sausage, Sweet Potato and Thyme Pizza1 recipe pizza dough (I really can’t improve upon this recipe) olive oil Thin sweet potato slices (I suggest using a mandoline) 1 pound Italian sausage (casings removed) fresh thyme leaves 1/4 – 1/2 sweet onion diced 4 oz. goat cheese, sliced a little bit of shredded fontina cheese
Preheat the oven to 500 degrees.
Prep all of your toppings. Slice the veggies and cook the sausage in the oil of your choice.
Make the pizza dough.
Once your pizza dough is ready. Drizzle both crusts with a bit of good olive oil and top with just the sweet potato slices, sausage and a sprinkle of onions.
Pop one (or both) of the crusts into the oven for about 5 minutes. Then rotate 180 degrees and leave in the oven for 3 minutes more. Now its time to add the goat cheese. Spread the goat cheese slices evenly over the pizza and leave the pizzas in the oven for 2-3 minutes more. Remove the pizzas and sprinkle with the fontina and a decent amount of fresh thyme.
Serve and enjoy!
Technically this probably qualifies as more of a flatbread than a pizza (I’m not really sure why I don’t always want to put sauce on these things) but either way. It’s good.
