The heat is upon us! In my neck of the woods the forecast is calling for highs in the 90s. Time to start eating all the cold things. Glad I finally picked up a popsicle mold. This thing is going to get so much use. This first batch was made on a whim and actually turned out so much better than I imagined. The best part, the protein powder offers a little staying power and turns these treats into a perfect post-summer workout refresher.
Strawberry, Mint and Coconut Pineapple Protein Popsicles1 container coconut water with pineapple (I used VitaCoco) 1.5 – 2 cups fresh strawberries 2-3 tablespoons fresh mint 1 packet Perfect Fit Protein Powder
Combine everything in the blender until smooth, pour into popsicle molds and leave for a few hours to solidify. (This will make more mix than you probably need. I poured the excess into small paper cups and after about an hour stuck wooden skewers in the middle.)
