I love snacks! Appetizers also count and now I see beet chips being eaten as both a lot in the foreseeable future. This week’s Food Matters Project recipe for Beet “Sandwiches” was chosen by Meg over at My Wholefood Romance (love the name). I went super simple with my version, leaving the beets open-faced with just a little goat cheese smeared on top with some freshly torn mint and cracked pepper. These were some pretty irresistible little bites.
