The Food Matters Project: Spring Rolls for One

I’m headed to the beach soon, so you know what that means … a bathing suit. Like probably almost every other woman (and maybe even some of the guys) out there, I have my hesitations about having so much of my body on display. Not that I’m going to let anything stop me from enjoying the sun & surf, but I have been trying to eat a few more veggies and booze a little less these past couple weeks and these spring rolls were the perfect afternoon snack.

The original recipe for Mr. Bittman’s Spring Rolls with Peanut Sauce can be found over on Alyssa’s blog Everyday Maven. My snack was simply filled with a few veggies (cucumbers, carrots, yellow squash, cabbage and romaine) and I put together a quick dip of soy sauce, garlic & honey.       We’re headed to South Carolina, Hilton Head for a few days and then Charleston :-)

    Is there any woman who doesn’t share your hesitation??? Charleston, South Carolina, Savannah–those are just story-book names to me–someday I’ll get there! Have a great time.
